“Milks Leap Towards Immortality” Cheese Plate £9.25 Served with Oatcakes, wafers, grapes and chutney Shropshire Red Made by the Eyres fmaily at Abertanat Farm Dairy Llanyblodwel. Their heard of 150 Holstein / Fresian cows produces the milk for this russett coloured cheese with a smooth texture Cashel Blue Made by Louis & Jane Grubb, The Rock of Cashel, Co. Tipperary, Ireland. Situated near to the 600ft high rock of Cashel – a local landmark, Louis and Jane began making Ireland’s first blue farm cheese with milk from their pedigree Friesian herd, in 1985. Cashel Blue is a soft, mild cheese which ripens between 6 and 12 weeks, it becomes softer and creamier over time, with the taste of flowers coming through. Lincolnshire Poacher Made by Simon Jones at Ulceby Grange, Alford. Simon is the fourth generation to be running the family’s 720 acre organic farm on the edge of the Lincolnshire Wolds, five miles from the sea. He uses a cheddar recipe to turn raw milk from his 200 Holsteions into a cheese that is matured for 15 months to give a longer, smooth flavour.
